Coconut Mango Chia Pudding

Nutritious Food Architect Ray Shim shares this signature recipe for a light and scrumptious dessert that's so good for you!  Enjoy! 


  • 1 cup coconut milk
  • 1 cup coconut water
  • 1½ cup ripe mango, in small cubes
  • 4 tbsp black chia seeds
  • 4 tbsp shredded coconut
  • 3 tbsp honey, maple syrup, or agave syrup
  • 4 drops Young Living Spearmint Vitality or Spearmint+ essential oil
  • 3 drops Young Living Lemon Vitality or Lemon+ essential oil
  • 3 drops Young Living Lime Vitality or Lime+ essential oil
  • Instructions:

    Mix all ingredients properly, refrigerate for about 3 hours and serve.
